Can someone recommend some jack points for the rear? I am wanting to change the diff fluid.

Jack at the diff itself, put stands at the rear of the frame rails. You'll need to jack up the front too and put it on stands as you need the car to be level when changing the fluids.

You can also use the pinch welds in both the front and the back as jacking points if you are using a jack that can safely do it. I have a pinch weld adapter from Flyin Miata that works well on the 6 with a regular floor jack.

Jack up the rear of the car using the rear diff? Any particular part of it?

The issue with the rear pinch welds for me is that one side, where there isn’t plastic, is sort of bent (bought it that way). I could do it but I am concerned about damaging the plastic part so was looking for alternatives.

Place the jack under the subframe crossmember directly behind the rear diff. Do not lift with the diff itself.
